Free-range Turkey
The free-range turkey is the most well-known and the most traditional festive poultry! The breed is yellow with black feathers, but only the females are bred because they have such tender meat. The turkey is raised for 150 days and is fed 80% local cereals, completed with greenery, seeds and insects.
Its meat is the colour of straw, slightly pink for the breasts, and red for the legs.
A bird best cooked stuffed. It is important to baste often with the cooking juices to avoid the meat drying out.
