Free Range Capon
The free range capon is a festive poultry “par excellence”!
The capon is raised in the open air by our farmers for 150 days.
During the last 25 days of rearing, it is finished with milk to make its meat even more tender.
To properly roast a capon, it is important to baste it regularly during cooking keep the meat tender and make the skin crackle.
