Pullet
The pullet is the capon’s little sister.
The pullet is a young hen, raised in the open air for 120 days.
Like the capon, during the last 21 days of rearing, it is finished with milk to make its meat even more juicy. Its diet consists of 80% locally grown Landes corn.
This festive poultry is ideal for smaller gatherings of 5 or 6 people.
The pullet is best prepared slow roasted in the oven.
