Spring Chicken
The spring chicken is a young chicken, raised for around 40 days. It is from the same breed as the free-range corn-fed chicken : a rustic slow-growing “bare-neck” breed.
It is fed 70 % cereals, mainly corn. Its feed is completed with vitamins and minerals. This young bird offers tender meat with a delicate flavour. It does not shrink much during cooking, and is low in fat. It is simple to prepare.
